Ingredients

  • Brioche bun
  • American cheese (2 slices)
  • 2 × 3oz beef patty balls
  • Burger sauce (mayo, ketchup, mustard, dijon)
  • Maz Burger Seasoning

  • Cast iron skillet
  • Burger press
  • Parchment paper
  • Sturdy spatula

Heat the iron

Get your cast iron screaming hot. That's the whole trick — you want the patty to sear on contact, not steam.

Smash 'em flat

Lay a ball on the pan, cover with parchment, and press hard with the burger press. Flat and thin = crispy edges. Don't be shy.

Season light

Give it a light dusting of Maz Burger Seasoning. Don't overdo it — the blend is doing work you can't see.

Flip, cheese, melt

At 90 seconds, flip. Season the other side light. Lay cheese on one patty, stack the second patty on top so everything melts together.

Toast, sauce, stack

Toast your brioche on the cast iron. Sauce both sides. Stack: bottom bun, patties, done. Eat immediately.
